The important thing to remember about marzipan is that its primary
component is ground almonds. Almonds, like all nuts, are very high in
oils which will affect the taste of the finished product rapidly as they
turn if left uncooled. Refridgerated, however, I've kept marzipan around
for as much as two weeks, with no ill affects, and I suspect you can go
a bit longer safely. Frozen, it will last at least six weeks, probably
more.
