I wouldn't call the head, feet, or even entrails "waste bits."  Think
headcheese ("souse" where I come from), pickled or just plain boiled
pigs' feet ("pork trotters" in Britain), and chitlins ("chitterlings" 
if you will).  Intestines were used as sausage casings.  Recall from
the "Little House" books that the bladder was blown up as a balloon
for the children?  I hardly think that was a new idea at that time.

But again, I am unable to cite sources; these bits were internalized
from pre-highschool readings.
