Irish wolfhounds, as you know, are enormous dogs.  They need lots of
space, exercise and food.  They can jump over fairly high fences if they
want and they run pretty fast.  If you and your family are willing to
deal with this, then your next stop should be the American Kennel Club
(AKC) web page:

Follow the links to the hound group, then click on the link to the Irish
wolfhound page.  This will give you some information about the breed,
including the breed standard, which is a written description of what the
ideal specimen of the breed should look like.  Of course no one has ever
had an ideal Irish Wolfhound, or any other dog, but the standard sets down
the things breeders should be aiming for.  The AKC page will also offer
you what information is available about the national Irish Wolfhound club. 
Breed clubs are the best way to find a breeder, because (1) the club's
members are usually breeders and (2) the club is going to be able to tell
you all the things you should know to ask a breeder before you buy a puppy
from them.  The club can also help you contact its members who live in
your area, so you won't have to go to Kansas to buy a dog (important if
you don't live in Kansas). 

I don't know what the going rate for Irish Wolfhound pups is offhand, but
I'd guess it's probably between $1000 and $1500.
