Ah, brings back memories...

In Britain, sultanas are raisins (usually fairly blond colored).  And castor sugar is roughly equivalent to store-bought granulated cane sugar.  I think castor sugar is a little finer, or something.  I'm sure you'll get far more definitive answers from the true cooks in the group; I just remember from my youth (lived in England for 5 years), and my mother, who was a chef.

Good gentles,


I was reading up on some cookie recipes that I've been experimenting with and I've come across
two ingredients that I'd like to know more about.


Firstly, what are sultanas?  (In a cookie recipe)  and secondly, what is castor sugar? (could be wrong
about the spelling but I believe it's right.  Sorry didn't bring my notes with me before posting).  Any info
would be greatly appreciated.
