I am not sure where this recipe comes from as it exits in my archives as
a scribbled list on a well worn peice of paper...
The recipe I have reads thus:
Seed Cake
Preheat oven to 325 degrees farehneit.
Cream: 2 cups butter
Add slowly and cream well: 2 cups sugar
Beat in, one at a time, 9 eggs
Add: 1 teaspoon vanilla and 1/2 teaspoon mace, beat well
You may add: 2 tablespoons brandy or 8 drops of rose water
Sift before measuring: 4 cups cake flour
Resift with 1/2 teasppon cream of tartar and 1/2 teaspoon salt
Add the sifted ingredients slowly, at the lowest speed (I do this by
hand.), mixing only until the batter is thoroughly blended.
Add: 1/2 cup chopped nuts and then 2 teaspoons of caraway seeds
You may also add, or leave out 1/2 cup each of citron, candied cherries
or 1 teaspoon grated lemon rind or 1/2 cup of shaved candied orange
peel.
Pour batter into greased and floured or parchement lined loaf pans.
Bake about 1 hour.
